CUT in the Palazzo of Las Vegas
All those who still think of Las Vegas as nothing more than the city of sin, or at least the city of blackjack, are in need of a visit to the bright lights of the desert. As the biggest fan of New York dining in the world, it is not easy for me to admit that Las Vegas has dramatically closed the gap between the first best dining city (New York) and second best dining city (Las Vegas) in America ... And my friends, the gap between Las Vegas and whomever is in third place is HUGE.The stellar culinary experiences available in Las Vegas could not possibly be better illustrated than by what I am sure is the best steakhouse I have ever frequented in Las Vegas, and that is Wolfgang Puck's CUT at the Palazzo Hotel. This is an extreme thing for me to say, as there are some unbelievable steakhouses in Las Vegas (The Prime in Bellagio, Vic & Anthony's downtown, and SW Steakhouse in the Wynn all come to mind). But CUT is at another level, and I have to say it is worthy of the highest rating I could possibly give a steakhouse.I started with their Shrimp and Lobster Louie appetizer, and was stunned by how fresh the seafood was, and how captivating the blend of flavors were. The tomatoes were perfectly textured, and the avocado gave the dish a perfect seasoning.But CUT is, above all else, about their wagyu and kobe beef steak selection. And there is no better way to get the best of all worlds than with their house sampler. Australian Wagyu, Kobe style Wagyu from Snake River Idaho, and prime ribeye aged for 35 days - your only frustration will be trying to determine which cut is your favorite. I was unable to decide, so therefore will have to go back to do additional research on the matter. (I heartily recommend a mild tasting of the chef's sauce pairings as well; he kind of knows what he is doing) ...Finally, you would be wise to give a few chocolate delicacies a try, and certainly the banana creme pie (while you are at it). Don't worry - Palazzo has a world-class fitness center to put to use the next morning ...
